From humble seed pieces to full, knuckled “hands,” our ginger is cultivated in our Ancient Deep Mulch (ADM) system, a living bed designed to retain moisture, protect soil organisms, and build fertility year after year. The result? Clean, vigorous ginger with rich flavor and strong storage quality—grown right here in Beltsville, Maryland (Zone 7).

Here’s what that journey looks like.

Phase 1: Pre-Sprouting

Late December – February

What we’re doing
During the winter months, we wake up our seed ginger indoors, giving it the warmth and time it needs to form strong “eyes” before ever touching the soil.

What it means for you
Earlier establishment and healthier plants from the start—no rushing, no stress.

Phase 2: Planting into Warm Beds

March – May

What we’re doing
Ginger hates cold, wet soil. We wait until conditions are right, planting only when our ADM beds are warm, biologically active, and ready to support growth.

What it means for you
Less transplant shock, steadier growth, and stronger plants overall.

Phase 3: Establishment


May – June

What we’re doing
Roots begin to spread, shoots push upward, and soil biology gets to work—fungi, microbes, and organic matter forming a living support system beneath the surface.

What it means for you
A strong foundation that sets the stage for serious bulking later in the season.

Phase 4: Peak Growth


June – August

What we’re doing
Tall stalks and a heavy leaf canopy capture sunlight at peak efficiency. This is prime photosynthesis season—when the plant is actively “earning” the harvest.

What it means for you
More energy is stored underground, which translates to better size, flavor, and density.

Phase 5: Hilling & Bulking

5–7 Months After Planting

What we’re doing
We hill the plants with biologically active compost, encouraging the ginger “hands” to expand outward and fill in fully.

What it means for you
Bigger ginger, better form, and cleaner rhizomes—without synthetic inputs.

Phase 6: Maturation

September – November

What we’re doing
As temperatures cool, the plants slow naturally. Underground, the rhizomes firm up and concentrate flavor.

What it means for you
Richer taste and improved storage quality—ginger that performs well in your kitchen.

Phase 7: Harvest


October – December

Harvest Day: The “Hands” Come Out


This is the payoff.

Mature ginger is carefully pulled from living ADM beds, emerging with thick rhizomes, healthy feeder roots, and soil still clinging—evidence of a thriving underground ecosystem.
